Coastal desalination plants often pump the brine back into the ocean.

Already, a local community group, Comite Civico del Valle, has raised concerns about the environmental and health risks of one of the nearby geothermal plants that plans to produce lithium from the brine brought up in the energy production process.

The brine now inside the shrimp seasons them and helps them stay juicy while cooking, while the initial release of water from the salt rub will result in a texture reminiscent of freshly cooked live shrimp.

The fire also damaged a vacant restaurant that used to be Ruby’s Diner and a snack shop that housed the Brine Box, a seafood eatery.

Jessica Waithe, operator of the Brine Box restaurant located at the end of the pier, told the San Diego Union-Tribune that several employees were working when the fire broke out, but all were able to get away safely.
