Put lid on shaker and shake it up to cool.

Place straining-cloth over mouth of churn, pour in brine, put lid on churn, turn sharply half a dozen times, and leave for 10 to 15 minutes.

Put lid on saucepan and steam gently 3/4 hour.

Cut up the moist, juicy vegetables such as celery, spinach, onions and tomatoes, place them with the water in a casserole, put lid on and slowly cook for about one hour until enough juice is extracted to safely add the rest of the cut-up vegetables.
