At one panel, K-12 educators and advocates talked about strategies for challenging such laws, which the A.H.A. has joined with more than 150 other groups in condemning as threats to “free and open exchange.”

The editor of The American Historical Review, the journal of the American Historical Association, the nation’s oldest professional association of historians, noted in an editor’s letter that the controversy was “all anyone asked me about at the A.H.A.’s annual meeting during the first week of January.”

“The clear goal of these efforts is to suppress teaching and learning about the role of racism in the history of the United States,” the A.H.A. and three other associations declared in a statement in June.

For decades, as part of this program, the A.H.A. strongly promoted a low-fat diet, advocating the use of margarine instead of butter, the avoidance of eggs, and the limiting of saturated fats.

Recently, Ivor Benjamin, the president of the A.H.A., appeared onstage at an Apple special event, where he participated in the announcement of the newest Apple Watch, which features the ability to detect atrial fibrillation.
